Lamb Shank and Sausage Stew with Sauerkraut

The butcher's stew, as I've come to call it, was something I made with a few pantry staples and pieces of meat I had in the fridge one day when I realized a bunch of hungry guys coming for dinner and I only had a couple hours to cook. It's a rich, meaty stew you can make with a little smoked meat and sausage, or a combination of whatever you have around. The version here is made with smoked lamb shanks, sausages, and a little bacon, along with tomatoes, stock, roasted peppers, and, the secret ingredient: sauerkraut. Serve it with your favorite starch, here I use wild rice, but mashed potatoes or pasta will work too. Link to the full recipe in the comments.
