DHOKLI NU SHAK / KATHIYAWADI DHOKLINU SHAK / DHOKLI SUBJI / Traditional besan curry
The Saurashtra region of Gujarat is popular for its Kathiyawadi cuisine. This cuisine is prominent in the cities like Rajkot, Jamnagar, Junagarh, Surendranagar, Limbdi and Porbandar. Food here is spicy, oily but delicious. They use lots of garlic and chilli. Dhokli nu shak has very chatpata tangy spicy flavour. In this recipe Gram flour cakes are cooked with spicy buttermilk gravy. Tanginess from the buttermilk adds an extra flavour to the recipe and I am sure when you eat this subji ones, you will definitely add this into your regular dinner menu. You will love it.

Ingredients
For DHOKLI
2 tbsp oil
1 cup Gram flour (besan)
2 Onion chopped
1 tbsp Ginger garlic paste
½ tsp Ajwain (Carom seeds)
Turmeric powder – pinch
½ tsp red chilli powder
1 tsp coriander – cumin powder
Salt to taste
1 ½ cup water
For CURRY
2 tbsp oil
Cinnamon sticks – 2
Bay leaves
Dried red chilli - 1
1 tsp cumin seeds (jeera)
A pinch, Asafoetida
Chilli, ginger – garlic paste – 1tbsp
Chopped onion – 1 cup
Tometo pure – 1 cup
Salt to taste
2 tbsp red chilli powder + water
2 tbsp coriander – jeera powder + water
½ tbsp turmeric powder
1 tsp garam masala
Curry leaves – 10 to 12
1 cup buttermilk
Water for thickness of gravy
Coriander (dhania leaves), to garnish
Serve this dhokli nu shak hot with phulka roti / chapati / paratha / bajri na rotla, onion slices and green chilli.. you will love this spicy and tangy dish.
