Ingredients: 2 cups unbleached all purpose flour 1 tsp baking powder 1 medium size grated coconut About 1 and 1/2 cups. (I remove the brown part and grated only the white part). You can also use store bought shredded coconut. 1/4 cup sun dried raisins 1/2 cup raw cane sugar 1/4 tsp salt 1/3 cup unsalted vegan butter (If you use salted butter add about a pinch of salt) 1/2 tbsp vanilla extract ,1/2 tsp grated nutmeg 1/2 tsp ground cinnamon 1/2 cup unsweetened apple sauce *This acts a the egg replacer and also the liquid in this recipe. If you don’t have apple sauce you can gradually add coconut milk until dough form the right consistency. Bake at 350 degrees F for 25 minutes Enjoy!!
