How to make bakery style maalu/ fish bun at home.

Ingredients.
♦️For the filling.♦️
260g / 2 tins tuna.
3 medium onions chopped.
4-6 green chillies chopped.
1 tablespoon Ginger & garlic chopped.
1/2 teaspoon cumin powder.
1 teaspoon pepper powder.
1 teaspoon red chilli flakes.
Spring onion green part only.(handful)
2 medium potatoes boiled and cut.
Salt as required.
Bun Dough.
3 cups all purpose flour.
1 cup cold milk.
6 tablespoons/85g butter.(melted)
4 tablespoons sugar.
1 tablespoon + 1 teaspoon yeast.
2 large eggs ( room temperature)
Salt as required.
♦️If your dough is too sticky add 1/4 cup flour ♦️
Method.
In a large bowl add melted butter, milk, sugar, yeast, salt & eggs.
Whisk until everything well combine.
Add flour .
You may need extra flour depends on the quality of the flour.
Mix everything using a hard spatula cover & keep for an hour.
After an hour transfer the dough into a floured surface knead until dough become smooth & elastic.
Keep the dough into a same bowl cover & keep for half an hour.
After half an hour take out the dough from the bowl make small equal size balls.
Flatten the balls using your finger keep a spoonful of filling in the Centre carefully fold three sides.
Make a triangle.
Pinch the edges by your fingers so the bun won’t open when it rise.
Keep the buns in a buttered tray cover using a wet towel let it sit until doubled in size.
Add egg whites& 2 tablespoons water whisk brush the top of the buns.
Bake in a preheated oven for 20 minutes.
Brush water on top of the bun immediately take out from the oven.
Cover with a kitchen towel & let them sit for atleast 15 minutes.
