Chef’s name: Nauneet Kaur Type: Non Vegetarian Language: Hindi Recipe Name:Healthy Butter Chicken Serves: 5 Cooking time: 45 Minutes Three Main Ingredients: Chicken,Butter, Tomatoes Ingredients:- For the marinade: 500 gms chicken, give cuts 2 tbsp thick yogurt 2 tsp ginger garlic paste 1 tsp degi mirch ½ tsp garam masala ½ tsp salt ¼ tsp black pepper pd ½ tsp cumin pd For the curry: 16 almonds with skin 5 cashewnuts 1 tsp butter 1 tbsp oil ½ tsp butter,extra 1 tbsp oil,extra ½ tsp cumin seeds 3 onions,diced,150 gms 14 cloves garlic 4 tomatoes,red ,diced 1 green chilli 1 tsp salt, level ½ tsp sugar ½ tsp coriander pd 2 tsp kasoori methi ¼ tsp turmeric pd ½ cup water 2 tbsp green coriander chopped 1 tsp butter,again 1 tbsp cream Garnish: 1 tsp melted butter 1 tbsp cream ¼ tsp garam masala 2 tbsp green coriander, chopped Method Mix all the ingredients of the marinade and keep for 12 hours. At the time of making boil almonds and cashewnuts for 2 minutes in a little water. Cool. Then grind to a paste. Keep. In a non stick kadhai heat butter and oil. Add marinated chicken,stir. Cover and cook on sim, till done stirring 3 – 4 times in between. Then dry on high heat and sear. Take it off heat. Give smoke flavour and keep it covered. In another non stick kadhai heat butter extra and oil extra. Add cumin seeds,splutter. Then add onions and garlic and sweat. Now add tomatoes,green chilli,salt and cook until soft,about 10 minutes. Now add sugar,coriander pd,kasoori methi,turmeric pd, stir fry. Take it off heat, cool. Then grind with the ½ cup water to a fine paste. Now uncover the chicken and put it on low heat. Add the onion tomato mixture, almond cashewnuts paste. Mix all. Add green coriander, butter again, cream. Mix, add a little water to bring the gravy to the right consistently. Keep the gravy a little on the thicker side. Give 3 – 4 boils. Take it off heat. Check seasoning. Put in the dish. Garnish with ingredients of garnish, in the same order. Serve hot.
