INGREDIENTS Crumb Topping 100 g sugar 80g plain flour 60 g butter, melted 1/2 tsp cinnamon Blueberry Muffins 100 ml oil 150 g sugar 60 ml milk 60 g yogurt 1 Tbsp vanilla (optional) 1 egg 1 Tbsp Lemon Zest 1 tsp baking powder 180g plain flour 150 g blueberries This recipe will give you 10 muffins INSTRUCTIONS Step 1 Mix sugar, flour, melted butter and cinnamon together for topping .Set aside. Step 2 In a medium bowl combine the oil, sugar, egg, yogurt, milk, vanilla and Lemon Zest then whisk until well combined Step 3 Sift baking powder and plain flour into the bowl, whisk until just combined Step 4 Toss 1 Tbsp flour with blueberries (The flour will help keep the blueberries from sinking in the muffin as it cooks.) and fold in the bowl gently with a spatula,Take care to not over mix, Step 5 Divide batter between each muffin cup, filling all the way to the top.Sprinkle the tops with the 1 Tbsp of crumb topping Bake at 180˚C for 20 min Step 6 Remove the muffins from the oven and allow to cool slightly before removing from the tin. *Enjoy!
