ส้มตำปูปลาร้า - Sam Tam Boo Pla Ra - Papaya salad with salted black crab
Based on the recipe in the Pok Pok cookbook, this verison of papaya salad includes salted rice paddy crabs and fermented fish sauce, both used in the Issan region of Thailand.

Recipe:
1 tbsp dried shrimp, size medium
1 tsb palm sugar
1 lime, preferable key lime
1-2 garlic cloves, peeled
3-4 red thai chiles, also called birds eye chiles
1/2 cup long beans, cut into 2 inch lengths
1 frozen black salted crab
1 tbsp tamarind water (2 oz wet tamarind pulp in 1.5 cup water)
1.5 tbsp lime juice
1 tbsp fish sauce
1.5 tbsp fermented fish sauce
1.5 cup shredded green papaya
4 cherry tomatoes
wedge of cabbage
