In this video, we are smoking a Texas Style Brisket, with a foil boat and beef tallow wrap... smoked on my Traeger Ironwood 885.
I'm using some new methods that I've never shown on the channel before. For a proper Texas style Brisket, we are only using a 50/50 blend of Kosher Salt & Coarse Black Pepper. I smoked low & slow at 225ºf w/ Super Smoke until the bark was a nice mahogany color and the fat cap on top was soft and rendered. I spritzed with an Apple Cider Vinegard / Water blend every 90 minutes or so. I used the foil boat method that I picked up from Chud's BBQ (I'll link his video below), and then used some rendered beef tallow in the boat as well. Once the brisket reached 203ºf internal in the flat, I pulled it and her rest overnight in my oven set to 170ºf. This did not continue to cook the brisket, but allow the juices to redistribute and fat to continue rendering. The results were amazing, and I may have a new favorite method!
