The house smells good, your meals taste better and you can have a renewable resource for deliciousness! We also have a starter for our Sunday waffles.     @nikosfilipino5 years ago For those who are wanting to expand their knowledge i highly reccomend either reading or watching on netflix "Cooked" by Michael Pollan. More specifically, the chapter/episode 'air' which covers bread and fermentation. It's a beautiful lecture on how healthy true bread is and how modern bread is not only crap, but is likely the root to the rise of gluten intolerance. He even goes as far to make the argument that those who are gluten sensitive should try eating naturally fermented sourdough and that they'll be absolutely fine. ... 3

    @eschaefer65125 years ago When I was a youth Kaiser rolls were delivered to grocery stores in large brown paper bags which kept the beautiful crunchy and crumbly texture of the rolls. Now everything is packed in plastic bags which makes everything soft and spongy. Hard to get a crisp Kaiser roll these days. ... 4

I’d sit with him on the kitchen floor, waiting for the bread to turn brown and re-position it in the oven, and add get another dough in the oven. He had his method. Almost 15 years ago my sister taught my mom that to make bread very soft you have to add yogurt to the dough mixture. My mom has since perfected her recipe and included evoo, milk and yogurt to her dough. No vegetable oil no water. Delicious! There’s no way I could resist eating it! ... 1

    @Quarksi5 years ago I lost 100lbs on the ketogenic diet. Good bread is an absolute must...you can definitely make good bread even on keto, you'll just have to make a non-traditional bread. Or rather not traditionally american bread anyhow, I believe older cultures used other grains than just wheat flour. At any rate the danger surrounding carbs is definitely real, but not all carbs are equal. As a general rule of thumb if you can avoid sugar in all it's forms then you're bound to lose weight. ... 18

    @dbtest1175 years ago I went keto and my health has changed dramatically. To much carbs are definitely evil. A sourdough bread made in a simple way is probably ok in small quantities. If you are healthy keep carbs under 100g/day if you workout a lot that can possible be higher.
    The best flour is the one you make yourself.

    @TraveisaBlue5 years ago For someone like me who just lost 75 lbs giving up bread, and I know good bread. This is like selling cocaine. God I wish I could eat the stuff. Some people can’t. If I could simply look at it as art and treat it like play doh, I could forget the family members who have been maimed by the diabetes, the cancer that feeds on their body when it turns into glucose. Giving up bread for me, along with sugar and other carbs must be what alcoholics go through to give up drink. ... 81

I'm doing keto because a lifetime of bread and high carb/sugar content made my life miserable. Small amounts ok...daily inclusion for many is a disaster. Sure my wife can eat it all day long without gaining a pound. But I can't. You just have to know your own limits. ... 113

    @giutubospatubo15465 years ago I'm really tired with the "diet" battles. Most of them go to opposite extremes, and many of them are sponsored by specific manufactures trying to defend their products. So, here's my opinion for what it's worth:
    1.- Eat a balanced diet
    2.- Avoid sugar as much as you can (it is REALLY BAD for you). Yeap, no sodas at all! Water, wine, natural drinks
    3.- Avoid processed food
    4.- Slow carbs (avoid white industrial bread). Pizza OR pasta, once a week. There are many other healthy carb sources; Chia, Oatmeal, Quinoa, quality homemade bread...
    5.- Eat little fruit. (A big glass of fruit is NOT as healthy as people think) Eat the fruit instead.
    6.- Eat LOTS and LOTS of vegetable (Everyone agrees on this one)
    7.- Quality fish and organic chicken are fine. Cheese, go for quality not quantity. Red meat, bacon, hamburger and fries, etc...well.... once a week tops. (sorry my Keto friends )
    8.- Exercise (Everyone agrees on this one, and even though it is SO IMPORTANT many just don't do it)
    9.- DON'T OVER EAT!!!!!! It is very hard, but if you eat healthy it becomes so much easier.I swear! Hi carb and sugar diets are addictive, and that is why you can't stop eating. Cut out sugar and go on slow and low carb diet, and you'll see the difference. I swear again!
    10.- Don't get too obsessive. I mean, there are many health freaks out there! Spooky! Just eat moderately, good quality foods and stay away of HI cabs and SUGAR diets. Keto diet? Nope, they are trying too hard to tell you bacon is healthy. Although, for diabetics candidates it can actually be a solution, but go for healthier and better proteins than bacon and salami.

    @cozyvamp5 years ago "I was a teenager at the height of the Atkins diet..." Actually, you were a teenager at the height of Atkins, rewound. ;) It was also very big in the 60s. My mother and all her friends were on it. Diet fads come and go, but Atkins seems to have stood "the test of time." ;)

It was more coarse and people probably won't enjoy it very much but it probably was more nutritious than the 'best' homemade bread that we make nowadays. ... 1

    the average lifespan in the palaeolithic era was low because infant mortality was high, no antibiotics, being attacked by predators.
    people who survived infancy actually got very old.
    I'm not saying it's the best diet out there, but i'd love it if people at least used good arguments.
