Peel the garlic cloves and set them aside. 2. Heat a dry pan over low heat and roast the cumin seeds and fennel seeds until fragrant. Let them cool, and then grind them into a fine powder. 3. In a mixing bowl, combine the red chili powder, mustard powder, turmeric powder, fenugreek powder, roasted cumin and fennel powder, and salt. Mix well. 4. Add the garlic cloves to the spice mixture and toss until they are well-coated. 5. Heat mustard oil in a pan until it reaches smoking point. Turn off the heat and let it cool slightly. 6. Pour the cooled mustard oil over the garlic cloves and spice mixture. Mix well to ensure the garlic cloves are evenly coated. 7. Finally, add lemon juice and mix again. 8. Transfer the garlic pickle to a clean, airtight glass jar. 9. Allow the pickle to marinate for at least 2-3 days at room temperature, allowing the flavors to develop.
